A Working Raw bar, Built on Your Counter.
Our team arrives quietly, builds a full chilled display on crushed ice, and shucks to order throughout the evening. Oysters opened the moment a guest reaches for one. Uni cracked at the rail. Ceviche dressed table-side.
Service is calm, white-glove, and entirely yours — no buffet line, no chafing dishes, no compromises on temperature or timing.

Sourced Within Sight of the Service
Most of what we serve is pulled from waters you can see from the dining room. Hope Ranch Mediterranean mussels grown on submerged longlines three-quarters of a mile off the bluffs. Vermilion Rockfish from the Channel Islands fishery. Santa Barbara uni hand-cracked the morning of your event.
The rest — oysters from cold-water beds in Humboldt, Tomales, and the Pacific Northwest, caviar from responsibly farmed roe — is selected the same way: named source, named harvest date, no exceptions.

Our sourcing radius is narrow on purpose. Hope Ranch Mariculture for mussels and Pacific oysters. The Santa Barbara Saturday Fishermen’s Market and Channel Islands sportfishing fleet for rockfish and spot prawn. Tradewind Seafood & the Santa Barbara Uni Co-op for hand-cracked urchin delivered the same day it’s pulled.
When the channel is rough, we say so. When the season changes, our menu does too.
